500 grams of amalki
7-8 small cardamoms
5 grams black pepper
A medium cinnamon stick
One tablespoon cumin
Two tablespoons fennel
1/3 cup ghee
400 grams of molasses
1 cup honey
A little hair
2 bay leaves
10 grams of dried ginger
10 grams of vanilla
10 gm Long Pepper or Pippali
5 grams of nagkesar
5 grams nutmeg
5 grams cloves
A handful of raisins
10-12 dried dates (seedless)
1/3 cup sesame oil
First wash the amalki well in cold water. Then boil in a pressure cooker (but don’t overcook). You can also boil it in a pan.
Then take out the amalki seeds, then make a good paste.
Grind all the dry spices together well. Then paste the herbs together. (You can also use fresh herbs after drying).
Then heat ghee and sesame oil together in a pan.
Then mix the amalki paste well in the mixture of ghee and oil. Stir in the light of the oven. Stir until the amalki oil starts to release. Now mix molasses and honey in the mixture, stir for 5-6 minutes on medium heat and remove with remaining spices.
When cool, pour into glass airtight jars.
